How to Make Copycat Starbucks Egg Bites at Home

Blend the main ingredients: Blend the egg whites with the cottage cheese, garlic, salt, and some of the shredded cheese.
Add the vegetables: Add the spinach and some of the bell pepper and pulse briefly.

Ingredients

  • 6 egg whites
  • ¼ Cup cottage cheese
  • 1 Clove garlic minced
  • ½ Teaspoon salt
  • ½ Teaspoon garlic powder
  • ¼ Cup roasted red bell peppers diced, from jar
  • 4 Ounces Monterey jack cheese shredded
  • 1 Cup spinach
  • green onions diced, as garnish

Instructions

  • Preheat the oven to 350 degrees F.

  • Add egg whites, cottage cheese, minced garlic, salt, garlic powder, and ¾ the shredded cheese to a blender and blend.

  • Set aside 2 Tablespoons of red peppers.

  • Next, add the roasted red peppers and ½ the spinach and pulse 3-4 times to gently break them up.

  • Lightly spray an egg mold with nonstick oil

  • Add a pinch of spinach, red peppers, and cheese to the bottom of each mold. Fill each mold with eggs ¾ full.

  • Next, Fill a baking dish 2” with warm water. Place egg mold into the dish. Cover with foil. Add to the oven on the center rack.

  • Bake eggs for 1 hour.

  • Garnish with green onions.
